The steaks had us into left-overs for days! Tonight, it's gonna be fried corn-beef hash with boiled eggs...some cheese to thicken the mix..salt,pepper.

Last night, I started out with a hambone and some black-eyed-peas. Next was collard greens with bacon and a little bacon grease. I had cornbread throughout the meal.
Next up was chicken-fried rice and eggrolls. Why Not?!?!

Tonight? Corn Dogs!!!!
These always remind me of the early '80's when we still had local racing Friday and Saturday. sniffling a tear....I sure do miss those days....

Birthday dinner last night...Roast pork with a Mustard - based sauce, brussel sprouts with tons of butter and Mamma's special peanut - chocolate chip cookies!

Saturday night, I had ham and swiss on toasted English Muffins.
Tonight, frozen chicken patties on Sara Lee's buns. I hope she pays attention to hygiene.

Dice some onions, bell peppers potatoes, and some spam....saute and serve. Add salt and/or pepper to taste. This is good eats!

Mom and I scored some 88% ground beef. This is one of the best ratios because, even if you saute this until it's brown, it still retains a bit of moisture. I am going to prepare some patties tomorrow and grill them...I will have to be on top of my game...I want these to get seared very slowly so the juices stay inside.
After they cool, somewhat, we shall freeze them. Of course, we will eat some of them before the "Ice Age".

Saturday, April 25th, was my sister's birthday.
The weather yesterday was perfect and I was the grill-master. Rib-eyes over char-coal......Should I say more?......

On tap for tonight...Zataran's Jambalaya family size with kielbasa and meatballs. Sautéed brussel sprouts on the side.
