Sorry, y'all, I haven't posted much lately. Dad has been ill and we put him in the hospital a week and a half ago. He'll be home tomorrow or Monday. Mom and I have been eating frozen food and leftovers.

Tonight, we're gonna make some big 'ol Dagwood sammiches. We have all kinds of cold cuts and cheeses! And some split-top honey wheat bread...Yum!
I like to heat a skillet and toast both sides...It might make your hands a bit slippery but it sure tastes great!

Gosh, I'm getting old! I can't remember what I ate Saturday night!
Sunday - Pork loin chops with yellow rice and black-eyed peas.
Monday - Rotisserie chicken torn off the bone with penne pasta and mozzarella cheese smothered in Alfredo sauce, then baked. Yum!
Tuesday - Tonight, we will leave the leftovers alone and have sammiches! ....and chips.

Wednesday - I have a can of soup called "Grilled Chicken and Sausage Jambalaya" . Campbell makes one version, Using the Aldi brand tonight
I'm gonna use the rest of the yellow rice to thicken it. A bit of coarse black pepper and a shot or two of Texas Pete and this should be to die for!
I hope I don't regret this....
Yikes!...I'm a day off my Prilosec....I might wake-up dying. Y'know...spices and whatnot.

Yeah, I woke-up at 2 am to take the first Tums I've had since starting Prilosec.
Tonight, Mamma decided she was gonna have what I had last night.
Thursday - Leftover Chicken Alfredo.
Alfredo must have been a real cheesy guy.........

Monday night - broiled chicken thighs. well seasoned, I might add.
Tuesday - Canned tamales, leftover chili, green onions, left-over yellow rice, and some grated Monterrey - Jack cheese.

Thursday Momma fried some sirloin tip stir-fry, battered with some milk gravy over some freshly baked canned biscuits with a side of turnip greens.
Now that's soul food!
Hamburgers Sunday night. Tonight....some jacked-up Pizza!
The missing nights involved leftovers and/or soup and sandwiches.

Mom got a phone call and boiled some eggs for about an hour. They were supposed to be part of supper but, I doubt we can even break the shells....
....can you say "Hot Pockets"?

Turns out the eggs weren't bad. We diced them and mixed them with some corned beef hash and spinach. Corned beef hash... they're ain't a lick of corn in it! :s_dunno
I'll be back..I gotta go check on the baked chicken....That sucker still has a long way to cook. It's in a a baking bag with a lot of seasonings. Were gonna have brussel sprouts and au gratin potatoes with it.
